1. Fondue for Two 

What you’ll need: 

  • 500 grams of alpine cheese at room temperature 
  • One teaspoon of cornflour 
  • One and a half cups of dry white wine
  • One tablespoon of pure rice sake 
  • Pinch of white pepper 
  • Pinch of nutmeg
  • Juice from half a lemon

Method

Place your grated cheese and cornflour in a bowl and mix until the cheese is coated completely, then set the bowl aside. Place your fondue pan on a stove at medium-high heat, and then add your white wine. Wait till the wine starts to simmer, and lower the heat. Gradually start adding your cheese while stirring. Stir until all the cheese is melted, then add your lemon juice and sake. Sprinkle it with pepper and nutmeg. 

Put your fondue pot on a burner to keep the cheese warm. You can then dip any foods you want into the put, like steak, mushrooms, and even toasted breads of your choosing. 

2. Filet Mignon for a First Date

What you’ll need: 

  • Two tablespoons of extra virgin olive oil
  • 4x 6 oz of filet mignon 
  • Pinch of kosher salt 
  • Pinch of pepper
  • Four tablespoons of butter
  • One tablespoon of chopped rosemary 

Method:  

Heat your olive oil in a skillet at medium-high heat. Season your mignon with salt and pepper. When your oil is about to smoke, add your mignon to the skillet. Sear your steak, and then add your butter and rosemary. If you want your meat to be medium rare, then only cook it until it is brown. But if you want it cooked completely, you can place your skillet in an oven preheated to 400 degrees Fahrenheit and cook for a further 4 minutes. 

3. Cheesecake Stuffed Strawberries

People love sweet treats so much that you’ll find candy in media, games, and art. This is because certain kinds of candy can release endorphins in your body, which is a chemical associated with happiness. That’s why you should always have something sweet on your menu. 

What you’ll need: 

  • Two dozen large fresh strawberries 
  • 10 ounces softened cream cheese 
  • Half a cup of confectioner sugar 
  • A teaspoon of almond extract 
  • Grated dark chocolate 

Method:

Remove the stems from the strawberries and wash them with cold water. Pat them dry with a paper towel, and then cut an X into the top of each strawberry. In a bowl, mix your cream cheese, sugar, and almond extract until smooth. Pipe the mixture into each strawberry and sprinkle dark chocolate on top. Place in the fridge to chill for an hour before serving. 

4. Chicken Saltimbocca

For your romantic dinner, you don’t want to make messy foods like pizza and spaghetti. Instead, make something appetizing yet easy to eat, such as Chicken Saltimbocca. 

What you’ll need: 

  • 2 Chicken breasts 
  • Pinch of salt 
  • Pinch of pepper
  • One tablespoon of finely chopped sage
  • Four slices prosciutto
  • ⅓ flour 
  • Two tablespoons of olive oil 
  • Two tablespoons of butter
  • Half a cup of dry white wine
  • Half a cup of chicken broth
  • Freshly chopped parsley 

Method: 

Slice your chicken breasts in half so you have two chicken breasts per cutlet. Place baking paper over your chicken and beat with a tenderizer until the chicken is flat. Season the chicken with salt and pepper. Sprinkle with sage, then place a slice of prosciutto on top.

Coat the chicken with flour. Heat your oil in a skillet on medium-high heat, and add your chicken. Cook for 3 minutes on each side. Take the chicken out of the pan, add your butter, and then your wine. Let it simmer, and then add your broth. Add chicken back into the pan and cook for an additional 5 minutes. Move chicken to a plate and garnish with parsley.
