I am not a fan of string cheese. My boyfriend swears by it and eats some every single day. I will give in to one exception though. I am a huge fan of a chicken dish he made with string cheese. This combination I do not mind at all! My Mom makes the best Parmesan Chicken and I was craving it. I unfortunately did not have her recipe, so we decided to re-create it. My boyfriend came up with a recipe that is almost the same. I was surprised with how much it resembled one of my favorite dishes. I have to give string cheese some more credit now. This is a very easy, cheap and quick dinner to make. It can be kid friendly and I think they would have fun peeling the string cheese! If you are a chicken lover, then it is a must to try this out!
What the chicken dish looks like before going into the oven
Ingredients:
- 4 mozzarella string cheeses
- 1 can cream of mushroom condensed soup
- Parmesan grated cheese
- Italian bread crumbs
- 3 eggs
- 4 thawed chicken breasts
- 1 cup, 5 minute instant white rice (cook separate, according to package)
How To Make:
- Crack the eggs and place into a bowl
- Whisk the eggs until combined
- Dip the chicken breasts into the eggs and then roll in Italian breadcrumbs, covering both sides
- Place the chicken breasts into a 9 by 13 inch baking dish
- Peel the string cheese into string slices and lay across chicken breasts, evenly
- Take one cup (4oz) of Parmesan cheese and sprinkle across chicken breasts, evenly
- Premix one can of mushroom soup with a half can of water in a separate bowl and pour over chicken breasts
- Place dish in oven and bake at 350 for 30-35 minutes, until chicken is cooked
- Cook the instant rice according to package
- When chick is done, serve chicken over rice
- Enjoy!
