Best potatoes for roast
Yukon Gold potatoes go well with anything. If you’re counting on mashing, frying, blanching, they’re just the best for it all. If you’ve guessed it already, Yukon Gold is good for roasting too. Times when you don’t have access to specific kinds of potatoes that suit a certain recipe, bank on Yukon Gold for that. Here are some things to consider when choosing potatoes to roast:
1. Starchy to waxy kinds
Russets are starchy, while fingerlings are waxy. The starchier potatoes are great for frying while waxier ones are ideal for boiling or mashing. Since Yukon Gold falls right between the roast, they are perfect for roasting.
The potatoes have a lot of waxiness to hold the shape and get nicely caramelized on the outside. On the other hand, they also have lots of starch to create a creamy interior that feels buttery and luxurious. These are the reasons why Yukon Gold are ideal for roasting. They are crisp, creamy, and have an amazing texture.
2. Thin-skinned
When the skin of the potato is thin, it means the ingredients can all go inside quickly. It will take less time to hang around and cut down on waiting hours to cook.
3. Size
Yukon Gold comes in a consistent size and shape. This helps most people in chopping and roasting them. Since every potato has a similar size, they get cooked at an equal rate. This mean, you won’t find a few undercooked or overcooked pieces while looking for the ones just right. They will all be just right!
4. You get them everywhere
Yukon Golds are pretty common potatoes to buy. In fact, potatoes are one ingredient that is all the time available. You can walk into any big or small grocery store and you’d know there are Yukon Golds waiting for you to be picked.
