One of my favorite appetizers EVER is bruschetta. Only a select few restaurants receive the “Best Bruschetta Award” that I have been to. Whenever I have the opportunity to eat something similar to the tasty appetizer, I go for it. So when I found this recipe I literally almost jumped for joy. When my eyes saw the word bruschetta, I was sold and started to already crave this dish.
The simple ingredients: 1 can diced tomatoes, undrained. 1 pkg. (6 oz.) stove top Stuffing Mix for Chicken. 1/2 cup water. 2 cloves garlic, minced. 1-1/2 lb. boneless skinless chicken breasts, cut into cubes. 1 tsp. dried basil leaves. 1 cup Shredded Mozzarella Cheese.
Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.
Place chicken in 3-qt. casserole sprayed with cooking spray; sprinkle with basil and cheese.
Top with stuffing mixture.
Heat oven to 400 degrees and bake 30 minutes, or until chicken is done.
Serve and enjoy! I had zucchini as the side veggie and it was a great combo.
This made for leftovers, so be prepared for your belly to be full!

- Top with stuffing.
- Bake 30 min. or until chicken is done.
