Chicken can be very tedious to make for dinner, at least for me. Out of most meats, I seem to get sick of eating chicken a lot. I am always looking for new ways to switch up the basic taste of chicken. I am a huge fan of salads. Especially Caesar. So instead of having just a chicken Caesar salad, why not make stuffed chicken with the salad in it? This recipe is for all SALAD lovers! It easily became not just a favorite chicken recipe, but one of my favorite recipes overall. A single chicken breast will leave you stuffed and make great leftovers. When I make this, I do not even prepare a side dish, because this recipe is so filling. Easy to make and only bakes a total of 40-45 minutes in the oven. Another great dinner dish that takes a twist on chicken.
I added the dressing, crushed croutons, lettuce and parmesan cheese in a large bowl
I poured the croutons into a bowl, covered them with a paper towel and used a meat beater to crush the croutons

I made a slit in the chicken breast and inserted the mixture from the bowl

I then coated each breast with the Caesar dressing
Next I dipped each breast into the crushed croutons to coat the chicken

This is what they looked like after the 30 minutes of baking in the oven. I still had yet to bake for an additional 10 with the grated cheese on top
What You Need:
- 2 Cups grated parmesan cheese, divided
- 2 Cups Caesar salad croutons, coarsely crushed, divided
- 1 Cup fresh baby spinach
- 1 Cup creamy Caesar salad dressing, divided
- 4 Bone-in chicken breast halves, skin removed (8oz. each)
How To Make:
- In a large bowl, combine 1 cup cheese, 1 cup crushed croutons, spinach and 1/2 cup salad dressing.
- Cut a pocket in the thickest part of each chicken breast and fill with cheese mixture
- Place remaining dressing and crushed croutons in separate shallow bowls
- Dip chicken in dressing, then roll in croutons
- Transfer to a greased 13in by 9in baking dish
- Bake, uncovered, at 375 for 30 minutes
- Sprinkle with remaining cheese and bake 10-15 minutes longer, or until a meat thermometer reads 170
