Cranberry and apple risotto

Ingredients (4 servings):

  • 1 cup of dried cranberries.
  • 3 cups of low-fat milk.
  • 1 cinnamon stick.
  • Pinch of salt.
  • 1/4 cup of butter.
  • 1-1/2 cups of Arborio rice.
  • 2 medium peeled and chopped apples.
  • 1/3 cup of brown sugar.
  • 1-1/2 teaspoons of ground cinnamon.
  • 1/8 teaspoon of ground nutmeg.
  • 1/8 teaspoon of ground cloves.
  • 2 cups of unsweetened apple juice.
  • 1 teaspoon of vanilla extract.

Preparation:

  1. Start rehydrating the cranberries for 30 minutes by soaking them in a bowl with enough hot water.
  2. In a saucepan, pour milk, cinnamon stick, and salt. Cook at medium heat, do not let it boil. Set aside.
  3. In another saucepan, melt some butter, incorporate apples and rice, stir and cook for 2 minutes.
  4. Pour half of the apple juice and cook until it evaporates. Include the rest of the apple juice.
  5. Add sugar, half of the hot milk, cook and stir frequently.
  6. Continue adding milk and stirring, until rice is soft.
  7. Drain the cranberries, and add them and vanilla extract to the risotto mixture. Mix very well.
  8. Let it stand for a while and serve.
