Mushroom Roasted Asparagus

I am always on the lookout for different ways to switch up my vegetable cooking. I love asparagus and wanted to try something different with preparing it. I found this recipe for Roasted Asparagus and I was sold. I already had white mushrooms so this was meant to be. 

Very easy to prepare and baking time is only 30 minutes. The only prep work I did, was chopping the asparagus and slicing the mushrooms. They are then seasoned and placed into a glass baking pan. After 30 minutes roasting at 400 degrees, they are done!

Delicious they sure are! I sprinkled a lot of Parmesan cheese on top. The taste was so enjoyable and I loved how healthy of a easy veggie this was to make! 

 Ingredients: Asparagus, white mushrooms, black pepper, garlic powder, salt and olive oil.

 Wash and chop asparagus into one inch pieces. Slice mushrooms.

  Add both vegetables to a baking dish. Lightly coat with olive oil, mixing to ensure that everything is evenly coated.

Sprinkle with salt, pepper, and garlic powder.

 Roast at 400F for approximately 30 minutes, to desired tenderness. Top with Parmesean cheese, if desired.

  • 1 bunch of asparagus
  • 1/2 package white mushrooms
  • Olive oil
  • Salt, pepper, and garlic powder, to taste
Directions:
