A person with diabetes heavily relies on different medicine for diabetes, physical activities, and healthy eating to carefully manage their blood sugar level. There’s a notion that these people can’t eat dessert because of the high sugar content of such food. Fortunately, according to experts, people with diabetes can still enjoy the desserts that they love, however, they should cautiously watch their carbohydrates and sugar intake. Time to celebrate! Indulge yourself with the following delectable diabetes-friendly desserts that you can munch on.

Orange-Grapefruit Cobbler

  • Ingredients:
  • 6 navel or Cara Cara oranges (peeled, seeded, and sectioned)
  • 2 pink or red grapefruit (peeled, seeded, and sectioned)
  • 1 cup of all-purpose flour
  • 1 tablespoon of sugar substitute
  • 1 ½ teaspoons of baking powder
  • ¼ teaspoon of ground ginger
  • 1/8 teaspoon of salt
  • 2 tablespoons of butter
  • 1/3 cup of plain low-fat yogurt
  • ¼ cup of refrigerated egg product
  • 1 tablespoon of fat-free milk
  • 2 tablespoon flaked coconut (toasted if desired)
  • 9 tablespoons of fat-free frozen whipped dessert topping, (thawed if desired)
  • 3 tablespoons of sugar substitute
  • 1 tablespoon of cornstarch
  • ¼ teaspoon ground ginger
  • 1/8 teaspoon of ground nutmeg
  • ¼ cup of water
  • Procedures:
  1. Preheat your oven at 400 degrees F.
  2. Combine the 3 tablespoons of sugar substitute, cornstarch, ground ginger, and ground nutmeg in a saucepan. This is for the filling of the dessert.
  3. Then, stir in the water. Stir and cook until it thickens.
  4. Gradually stir in the orange and grapefruit sections.
  5. For topping: Combine the flour, 1 tablespoon sugar, baking powder, ginger, and salt in a medium bowl.
  6. Mix the butter in a pastry blender. Makes sure that you will achieve coarse-like crumbs.
  7. Then in a small bowl, mix the egg, milk, and yogurt. After, combine the yogurt mix with the flour mixture. Keep stirring the mixture until it moistened.
  8. Spoon filling into a 2-quart square baking dish. Drop the topping you made into nine mounds onto hot filling.
  9. Then, bake it for about 20 to 25 minutes. Cool slightly before you serve it.

Cookies and Cream Crunch

  • Ingredients:
  • 1 package of sugar-free chocolate sandwich (for about 6 ½-ounce)
  • 1/3 cups of pecans (chopped)
  • 3 tablespoons of low-calorie margarine (melted)
  • 1 quart of vanilla ice cream (fat-free and no-sugar added softened)
  • Procedures:
  1. Combine chocolate sandwich, pecans, and margarine. Set aside 1 cup of this mixture.
  2. In a 9-inch square pan, press the remaining mixture firmly.
  3. Then, place it in the freezer for about 10 minutes.
  4. In a pan, spread the ice cream over the crumb mixture.
  5. Then, sprinkle the reserve mixture over the ice cream and gently push the mixture into the ice cream.
  6. Cover it and let it freeze for about 8 hours.
  7. Let stand at room temperature for about 5 minutes before serving.
