*Cool Whip Cookies*

 Just when I thought Cool Whip could not get any better, it did. By a lot. Almost anything that has cool whip on it, I will eat. It has always been a favorite of mine and makes any food or dessert, that much better. I would never think to make cookies with it. Sure maybe a scoop on top of them, but cool whip as part of the ingredients to a cookie recipe? Is that possible? Won’t it melt?

I had to find out for myself and this recipe quickly became one of my favorite cookies to eat. Reason #1: it is easy. Only 4 ingredients make up this dessert. Reason #2: It is cheap. 1 egg, 1 box of cake mix (which YOU get to pick out the flavor), sugar and 1 tub (8oz) of cool whip. Reason #3: it is quick. I added all the ingredients into a bowl, rolled into balls, dipped into sugar and baked at 350 degrees for 10-12 minutes. Reason #4: They are DELICIOUS. Yes, so delicious I had to use caps lock! Since you get to pick your flavor of cake mix, there are endless possibilities. I chose lemon cake mix and the cookies had such a perfect taste of lemon. Other addicting flavors are Red Velvet and Funfetti. And imagine how chocolate would taste…yum! So this cookie recipe meets all my requirements. The only tricky past is once the cool whip is added to the bowl, the mixture is a little tough to combine together. Once I got a rhythm down with stirring, it became easier. I also filled a bowl with sugar and rolled the mixture into balls. Warning, the dough will be very sticky! I scooped about an inch of dough into the sugar bowl and started rolling it around. It became easier to shape once the sugar stuck onto the dough. I then placed them onto a greased cookie sheet. Quite an easy process overall. This will make a big batch and will be devoured. If you are not addicted to these cookies, then you will be with just licking the batter off your fingers!

 Ingredients: Sugar, 1 egg, 1 box of cake mix and 1 container of Cool Whip

 Add all ingredients to a bowl

 Stir until combined

 Then take 1-1 1/2in. ball of dough and roll in sugar. It becomes less sticky once rolled in the sugar. 

 Placed spaced apart on greased cookie sheet

 Bake at 350 degrees in oven for 10-12 minutes

 Hot out of the oven!

 Wait a couple minutes before removing and serving

 If you want more flavor, add powdered sugar on top

I used the lemon flavor cake mix

 So addicting, tasty, flavorful, sweet, and delicious

 Enjoy!

Ingredients:

  • 1 (15 to 18 1/4 ounce) box cake mix (any flavor desired. I used Lemon)
  • 1 (8 ounce) container of Cool Whip
  • 1 egg
  • 1 small bowl filled with sugar

Directions:

  1. Mix all ingredients into a medium sized bowl
  2. Form into balls
  3. Roll in sugar
  4. Bake at 350°F for 10 to 12 minutes on a greased cookie sheet
  5. Cool in pan a few minutes before removing and serving
  6. Enjoy!
