That means 52 #TacoTuesdays to over indulge in chips and queso. That also means 52 days of taco recipes – which can slowly start repeating themselves.
Go beyond the standard ground beef, taco seasoning and tortillas combo with these recipes for a four course #TacoTuesday. .
Chips, salsa and queso are key to success when serving tacos. Add this seven layer dip to give guests something else to munch on while they wait for the main course. It also happens to be quite filling, so it’s not necessary to make a lot of it – unless you want the dip to serve as a partial meal for their main course as well.
Seven Layer Dip
In a baking dish, layer refried beans, guacamole and salsa. In a different bowl, mix together sour cream, taco seasoning and lime juice and layer it on top of the salsa.
For the next layer, spread your favorite shredded cheese and then top the cheese with lettuce, tomatoes and black olives.
If you’re feeding a crowd this dip is great to prepare in individual cups so guests can grab one and munch while they mingle (also great to avoid double dipping, because let’s be honest, you’ll want more).
Tacos are incredibly versatile and ultimately customizable depending on what fillings you want. Fish tacos, shrimp tacos, pulled pork tacos, hawaiin spin on tacos, all veggie? The choice is yours. But one of our favorites is cilantro lime tripitas tacos. They’re unique and traditional at the same time.
Take Rumba® Beef Tripas, cut them into taco sized strips, rinse them in cold water and then boil them in salted water for about 30 minutes. Once they are tender gently dry them with paper towels and then grill the strips until done. Sprinkle with cilantro, lime juice, salt and onion and serve with lime wedges.
There are the usual sides or toppings that are served with tacos; lettuce, sour cream, cheese, salsa, hot sauce, etc. Here are a few recipes that will enhance your tacos or can be served as a dip with chips.
Spicy Pineapple Salad
Slice a pineapple into ½ inch pieces, finely chop a white onion, take a red chile, break it open, remove the seeds and finely chop them. Put all the finely chopped ingredients in a bowl, add salt and lime juice and mix well.
Mexican Street Corn
Take 5-6 ears of corn on the cob and brush them with vegetable oil.
Grill the cobs on high heat, constantly turning them until it is slightly charred on all sides. Let the corn cobs cool and then cut the kernels off and mix them in a bowl with mayo, sour cream, lime juice, chili powder, cayenne pepper. Garnish with fresh cilantro to serve.
Dessert: Sweet Sugary Wraps
“Fried” Ice Cream
Your hands will get a little messy on this one so be sure to line a muffin pan with liners prior to starting.
In a shallow dish mix cinnamon and sugar with slightly crushed corn flakes. Roll vanilla ice cream into balls and then roll them in the corn flake mixture until completely coated.
Place the ball in the lined muffin sheet. Repeat until the muffin pan is full and then sit flat in the freezer.
Take them out a few minutes prior to serving and serve with caramel, honey, cherries and any other ice cream toppings.
Add water, butter and sugar in a large pan over medium heat, once it reaches a boil add vanilla. Turn off the heat to add the flour and salt and stir until thickened. Let the mixture cool for about 10 minutes.
Beat in the eggs with a hand mixer one at a time until completely incorporated. Pour the mixture into a piping bag with a large star tip. (Note: if you don’t have a piping bag use a plastic baggie and cut the bottom tip off).
Heat up a pot of oil to 375° and pipe the churros into long ropes cutting off the dough with scissors between strips.
Fry for a few minutes and rotate as necessary. Remove and roll in cinnamon sugar mixture then place on a cooling rack. Serve with chocolate sauce.
