Spicy Buffalo Chicken

I have one word to describe this recipe: Spicy! That is not an understatement. If you are a fan of hot and spicy, this will be the perfect dish for you. I am not too keen on my throat feeling like it is on fire when I eat, but I will try anything once when it comes to food. Overall, this chicken is very flavorful, moist, easy and a quick ingredient recipe to throw in the crock-pot. I paired this with tortillas to make shredded chicken fajitas. Definitely add toppings if you want to distract your taste buds from the fire! My favorite topping was adding sour cream. That cooled down the spiciness. If you can handle the heat, like I barely did, then try this spicy, buffalo chicken. 

 4 Ingredient Recipe: Thawed chicken, buffalo sauce, dry ranch packet and butter 

 Sprinkle the entire packet of dry ranch mix on top

 Add your half bottle or whole bottle of buffalo sauce to the crock-pot

 Cook on low for 6 hours, or high for 4 hours

 With a 1/2 hour remaining, shred the chicken

 Add 2 tbs. butter, let melt and stir in 

 Let the chicken sit for another 1/2 hour and then you are ready to eat!

 You can serve it as “soup”

Or fajita style, by adding your own toppings

 I loaded mine with cheese and sour cream

Ingredients:

  • Chicken, thawed
  • 1 packet of dry ranch dressing mix
  • A bottle of buffalo sauce (I used Sweet Baby Ray’s Buffalo Wing Sauce & Marinade)
  • 2 Tbsp of butter 

Directions:

  1. Place the chicken in the crock-pot.
  2. Sprinkle the entire packet of dry ranch mix on top.
  3. Pour the buffalo sauce over everything (I used the whole bottle) This depends on how much chicken you use. Use only half a bottle if you are cooking for 2-4 people.
  4. Cook on low for 6 hours or high for 4 hours.
  5. With half an hour remaining, shred the chicken.
  6. It should be so tender that you can easily shred it in the crock-pot.
  7. Add 2 Tbsp of butter, let melt, and stir in.
  8. Let the chicken sit in the mixture for another half hour to soak up all the goodness.
  9. You can serve this however you would like. I used fajita’s and topped it with sour cream. Using buns or just serving as “soup” would work too!
