Red Pepper Pasta

I discovered red bell peppers not to long ago and became an instant fan. They now have a permanent spot on my grocery list. This dish gives full credit to Derek, who spontaneously thought of this meal. I am a very bad improviser, especially when it comes to cooking. I like following recipes step by step and read directions. So I am lucky to have someone who can think of delicious meals every so often. This is something I am envious of from my spouse…shh he cannot know that! 

The concept of this dinner is super easy. Minimal ingredients, some spices, a bit of cutting up veggies and combining them all in a skillet are the steps. This is another great recipe that can be made into your own. Combine the pasta and ground beef with any veggies you choose. My favorite part of this dish was the secret ingredient: white wine! He added Pinot Grigio to the mixture and it sweetened the taste instantly. I was all about this dinner, it was something different and new to eat! 

Ingredients: 2 red bell peppers, 1 medium onion, onion powder, black pepper, 1 can of diced tomatoes, salt, lemon juice, butter, Italian seasoning, white wine and garlic powder.

Not pictured: Bow Tie Pasta 

Cut the red bell peppers and onion into slices 

Brown the ground beef in a large skillet on medium heat until cooked. Add the can of diced tomatoes.

While ground beef is cooking, make the bow tie pasta according to package directions.

Melt the 1/2 stick of butter in the microwave and add to the ground beef mixture.

Mix until combined.

Add the veggies, lemon juice and white wine to the mixture.

For taste, sprinkle the salt, pepper, Italian seasoning, garlic and onion powder.

Mix until combined well.

Finish by adding the cooked bow tie pasta.

Mix and let sit until all ingredients are combined and have thickened. 

Let cool and serve! If desired, sprinkle parmesean cheese on top!
