*Baked Sweet Potatoes*

My Mom gets 110% credit for this recipe. This is hands down the best sweet potato recipe I have ever tried. Not just because she is my Mom. This puts the sweet in sweet potato. This recipe has been in my family ever since I was born and has become a huge family tradition. At every Thanksgiving this recipe is made by my Mom. When I think of the Holiday, this recipe with all the memories comes to mind. It is timeless, delicious, classic and a tradition.

 The ingredients for the sweet potato mixture: 2 eggs, 1 stick of margarine, yams, 1 tbs. vanilla and 3/4 cup sugar

Once boiled and soft, peel the yams while still hot

Mix sugar, vanilla, eggs and margarine to mashed yams in a large mixing bowl

Spread in a greased glass baking dish

Mix soft butter, brown sugar, pecans and flour in a bowl

Bake at 350 for 1 hour, or until top is brown and caramelized

 Let sit for 10 minutes and serve

What You Need:

Sweet Potatoes

  • 3 cups cooked mashed sweet potato (About 7 large yams)
  • 3/4 cup white granulated sugar
  • 1 stick melted margarine (I used imperial)
  • 1 tbs vanilla extract
  • 2 eggs

Topping

  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup soft butter (I used I can’t believe its not butter)
  • 1 cup chopped pecans

How To Make:

  1. Boil the yams into a large saucepan (Usually takes 25-40 minutes) until soft. When a fork goes into the yams and are soft, they are ready
  2. Peel the yams when done boiling and while they are hot. (I put on rubber kitchen gloves and peel them. Most of the time, the skin will peel right off by hand)
  3. Mash the yams in a large mixing bowl
  4. Add 3/4 cup white sugar, 1tbs. vanilla, 2 eggs and stick of margarine into bowl
  5. Mix (I use my whisk) 
  6. Spread into a 9in. by 13in. greased glass baking dish
  7. To make the topping, mix in medium bowl: 1 cup chopped pecans, 1/3 cup flour, 1 cup brown sugar and 1/3 cup soft butter 
  8. Spread on top of the potato mixture
  9. Baked covered with aluminum foil at 350 for 1 hour, or until the topping is brown and caramelized
