-1 11-ounce can mandarin oranges, drained

-1/2 cup shredded, sweetened coconut

-1 cup mini marshmallows

Step 1

Add to a large bowl apple and add in lemon juice to keep from browning. Add the pineapple, coconut, grapes, oranges and marshmallows and toss together. Stir in Greek yogurt, again gently tossing to coat.

Step 2

Put in the fridge for 4 hours before serving to allow flavours to meld together. Serve chilled.

Put the quinoa in a medium saucepan with 300ml and cover. Bring to the boil first then simmer for 20 minutes or until the quinoa becomes tender. Drain any excess liquid then leave it to cool.

Add the herbs, seasoning, hazelnuts and fruit to the cooled quinoa.

Step 3

Toss together the olive oil, lemon zest and juice. Pour over the salad and thoroughly mix.
