A large part of fitness is eating healthily. We can gain muscle by working out, and we may get more tones, but it’s difficult to shift fat without eating the correct foods. Unfortunately, a lot of healthy foods can seem a bit… bland. The problem is we don’t know how to turn everyday fruits and vegetables into wonderful meals. Roasted vegetables are the perfect accompaniment to same plain baked chicken or grilled fish. They also have a low calorie, fat, and sugar percentage. This is a super quick and simple dish to make but it packs a flavorful punch.
Use whatever veg you have to hand for this dish. Some vegetables that work well together include red onion, which adds some sweetness, butternut squash, leeks, courgettes, and tomatoes. Start by prepping your veg. Courgettes will need to be topped and tailed, the flesh scooped out of squashes, and onions peeled and chopped. Put these in a roasting tin along with some garlic with the skin left on. Season with salt and pepper and scatter some rosemary and thyme over the veg. Add a good glug of oil and roast for around 50 minutes.
The ultimate topping for salads, tacos, and tortillas, salsa is a great side dish. Once you know how to make it you can do it at dinner parties and jazz up lunches. It’s so simple to make too. Make extra and decant it into mason jars. Store in the fridge and you have a ready-made dip.
If you have a food processor put red onions some red peppers, garlic, and tomatoes and pulse. This will leave you with a finely minced consistency, perfect for salsa. If you don’t have a food processor, don’t worry. You can still make this recipe, just dice all the ingredients by hand as finely as you can manage. Finish with a good squeeze of lime and some coriander if you wish.
Salads probably have the worst reputation of any fruit or veg for being boring. For too long some unloved iceberg lettuce has been tossed with tomatoes to make a frankly sub-standard salad.
